Penne with Arugula Pesto

Serves 6

Ingredients

1 lb whole wheat penne
1 pint cherry tomatoes
1 cup (4 oz) cooked rotisserie chicken

For the Pesto:
4 cups Fresh Express Organic Baby Arugula
3 garlic cloves
1/4 cup pine nuts
1/2 cup grated parmigiano reggiano
2/3 cup extra virgin olive oil
1/4 tsp kosher salt
1/4 tsp fresh cracked black pepper

Instructions

1. For the Pesto – In a blender, pulse all ingredients except for the oil. In a slow steady stream, add the oil.
2. Cook pasta according to package, drain and place back in pot.
3. Add tomatoes, pesto and chicken. Toss until ingredients are fully incorporated.
